I’ve been looking for a recipe to add to our weekly rotation, and finally found it!

 

Preheat the oven to 350°F. Grease a 9×13 inch baking dish.

In a skillet, cook the ground beef and onion until the meat is browned and the onion is translucent. Season with salt and pepper, then drain excess grease.

Mix in taco seasoning, black beans, corn, green chilis, and cooked rice. Let it simmer for 5 minutes.

Lay out tortillas, divide the beef mixture among them, and top with cheese. Roll them up and place in the baking dish, seam-side down.

Pour enchilada sauce over the tortillas and top with remaining cheese.

Bake for 20-25 minutes until the cheese is bubbly and tortillas are golden brown.

Let it rest before serving, then garnish as desired.
