Now, some may say that turning a burrito into a casserole isn’t traditional, but that’s just how we do things around here – it’s our way of serving up love in a dish, with every bite as delightful as the last.

Beef Burrito Casserole Recipe

Servings: 6 to 8

Ingredients:

1 lb ground beef

1 medium yellow onion, chopped

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 (4 oz) can diced green chilis

2 cups cooked rice

2 cups shredded cheddar cheese

1 cup red enchilada sauce

1 (1.25 oz) packet taco seasoning

6 large flour tortillas

Salt and pepper to taste

Optional garnishes: sour cream, sliced green onions, chopped tomatoes
