I’ve been looking for a recipe to add to our weekly rotation, and finally found it!

Preheat the oven to 350°F. Grease a 9×13 inch baking dish.

In a skillet, cook the ground beef and onion until the meat is browned and the onion is translucent. Season with salt and pepper, then drain excess grease.

Mix in taco seasoning, black beans, corn, green chilis, and cooked rice. Let it simmer for 5 minutes.

Lay out tortillas, divide the beef mixture among them, and top with cheese. Roll them up and place in the baking dish, seam-side down.

Pour enchilada sauce over the tortillas and top with remaining cheese.

Bake for 20-25 minutes until the cheese is bubbly and tortillas are golden brown.

Let it rest before serving, then garnish as desired.

Serving Suggestions:

A slice of this casserole is almost a meal in itself, but pairing it with a fresh green salad with tomatoes and cucumbers adds a crisp contrast. A side of Mexican-style rice or a scoop of guacamole can also beautifully complement the dish.

Variations & Tips:

Feel free to switch up the protein – ground turkey or shredded chicken work great. For a vegetarian version, use a variety of beans and veggies like zucchini or mushrooms. To add some spice, consider chipotle powder or jalapeño slices. Remember, letting the casserole rest before serving ensures clean and attractive slices.

So there you have it, a heartwarming dish that’s like a little slice of Midwestern heaven on your dinner plate. Enjoy, my lovelies!
