Prepare Ingredients
Cube the Rye Bread: Slice the rye bread into bite-sized cubes.
Shred the Corned Beef: Thinly slice or shred the corned beef for even layering.
Drain and Rinse Sauerkraut: Thoroughly drain and rinse the sauerkraut to remove excess brine and reduce saltiness.
Layer Ingredients
First Layer of Rye Bread: Spread half of the cubed rye bread evenly across the bottom of the greased baking dish.
Layer Corned Beef: Place half of the corned beef over the rye bread.
Add Sauerkraut: Evenly distribute half of the sauerkraut over the corned beef.
Sprinkle Cheese: Sprinkle half of the grated Swiss cheese over the sauerkraut.
Drizzle Dressing: Drizzle half of the Thousand Island dressing over the cheese.
Repeat Layers
Second Layer of Rye Bread: Add the remaining rye bread cubes.
Layer Corned Beef Again: Spread the rest of the corned beef over the bread.
Add Sauerkraut: Evenly layer the remaining sauerkraut.
Top with Cheese: Sprinkle the rest of the Swiss cheese over the sauerkraut.
Finish with Dressing: Drizzle the remaining Thousand Island dressing over the top.
Bake
Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Serve
Cool and Serve: Remove the foil and let the Reuben Bake cool slightly before cutting into squares. Serve hot and enjoy!
