Quick n Easy Mediterranean Stuffed Chicken

Preheat the oven to 400° Fahrenheit.
Dry the chicken with a paper towel. Make a horizontal slit in the thickest section of the chicken breast to form a pocket, taking care not to cut all the way through.
Season the chicken breast with oregano, paprika, salt, and pepper, then rub the seasoning into both sides.
In a small bowl, mix together the spinach, feta cheese, roasted red peppers, basil, olives, garlic, and 1 tablespoon olive oil. Stuff the mixture equally into the chicken breasts. To shut each pocket, use a pair of toothpicks.
Heat the remaining olive oil in a large oven-safe skillet or cast iron skillet. Add the stuffed chicken and sear until golden brown, about 3 minutes per side.
Place the skillet, uncovered, in the oven for 15-18 minutes, or until thoroughly cooked.
Storage: Keep any leftovers in an airtight container. They will persist for up to three days
