OLD FASHIONED ORANGE STEAMED PUDDING

Grease a large pudding steamer and then line base with baking paper.

Using an electric mixer cream butter, sugar and orange rind until creamy.
Slowly add eggs, 1 at a time, beating until combined.
Add in flour and milk. Mix until just incorporated.

Spoon mixture into steamer and gently smooth the top. Pop lid on and secure. Place steamer in a large saucepan.
Add boiling water to the pot stopping once the water level is halfway up the steamer. Cover with the pot lid. Bring to the boil then reduce to a rolling simmer.
Cook for 1 1/2 hours. Don’t allow to boil dry
Combine orange juice, vanilla and sugar in a saucepan. Cook, stirring until sugar has melted. Bring gently to the boil then reduce to a gentle simmer. Cook for 5 minutes or until mixture thickens and becomes syrupy.
Spoon over your pudding, sprinkle with pistachio’s and garnish with orange segments.
Serve with whipped cream or custard.
