▢4 tablespoons olive oil, divided
▢6 to 8 Russet potatoes, washed, scrubbed and dried
▢salt, to taste
▢1 pound lean ground turkey
▢salt and freshly ground black pepper, to taste
▢1 yellow onion, diced
▢2 cloves garlic, minced
▢10 ounces canned diced tomatoes with green chilies
▢1 cup canned or frozen corn, rinsed and drained
