Easy Stuffed Pepper Casserole

Instructions:

Preheat the Oven: Preheat your oven to 375°F (190°C).
Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until it’s browned and no longer pink. Drain any excess fat.
Add Vegetables: Add the diced bell peppers, onion, and minced garlic to the skillet with the cooked ground beef. Cook for about 6-8 minutes, or until the vegetables are softened.
Seasoning: Stir in the Italian seasoning, paprika, salt, and pepper. Mix well to combine.
Combine Ingredients: Add the cooked rice, diced tomatoes, and tomato sauce to the skillet. Stir everything together until well combined. Let it simmer for a few more minutes to allow the flavors to meld together.

Transfer to Casserole Dish: Transfer the mixture from the skillet into a lightly greased 9×13 inch casserole dish, spreading it out evenly.
Top with Cheese: Sprinkle the shredded cheese evenly over the top of the casserole.
Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
Serve: Once done, remove the casserole from the oven and let it cool for a few minutes before serving. Garnish with fresh chopped parsley if desired.
