2 cups raw cashews, soaked in water for 4-6 hours or overnight
1/2 cup coconut cream (from a chilled can of full-fat coconut milk)
1/2 cup coconut oil, melted
1/2 cup maple syrup or agave syrup
Juice of 2 lemons
1 teaspoon vanilla extract
Pinch of salt
For the Raspberry Swirl (optional):
1 cup fresh or frozen raspberries
2 tablespoons maple syrup or agave syrup
1 tablespoon lemon juice.
