Heat oil in a pan
Fry prawns each side for 2 minutes, remove to a plate
Wipe pan out with paper towel
Add stock and cream, whisk to combine.
Add garlic, Italian seasoning, black pepper
Cook stirring until mix reduces and slightly thickens.
Add Sundried tomatoes and capsicum, cook 2 minutes, stirring
Add in Parmesan cheese, tasty cheese, and baby spinach.
Cook stirring until spinach has wilted.
Add prawns back in to heat through.
Serve spooned over Fettuccini.
