Spinach Garlic Meatballs Stuffed With Mozzarella 


1 pound ground beef
1 pound ground pork
2 ¼ cups bread crumbs
3 eggs (use 4 if small)
Splash of milk
4 cloves garlic, finely chopped
½ cup Parmesan cheese, grated
Salt and pepper, to taste
2 tablespoons olive oil
Mozzarella cheese, cut into small cubes
1 jar marinara sauce (Rao’s recommended)
Instructions:
Spinach Preparation:
Heat olive oil in a skillet over medium heat.
Add the fresh baby spinach, tossing it until fully coated with oil. Let it wilt for about 2-3 minutes.
Add the finely chopped garlic and sauté until fragrant, around 1-2 minutes.
Remove spinach, chop finely, and allow it to cool before adding to the meatballs.
Meatball Preparation:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, eggs, milk, garlic, Parmesan, salt, pepper, and the spinach/garlic mixture. Mix until everything is well incorporated.
Shape the mixture into evenly sized meatballs. Press a cube of mozzarella into the center of each meatball and roll it so the cheese is completely sealed inside.
