Spicy Korean Beef Tacos


Prepare the Beef Marinade:
In a bowl, combine the minced garlic, minced ginger, gochujang, soy sauce, rice vinegar, brown sugar, sesame oil, and black pepper. Mix well.
Marinate the Beef:
Add the thinly sliced beef to the marinade. Toss to coat the beef evenly. Cover and refrigerate for at least 15 minutes, or up to 1 hour for more flavor.
Cook the Beef:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and cook for 3-4 minutes, or until the beef is browned and cooked through. Stir occasionally to ensure even cooking.
Warm the Tortillas:
While the beef is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or until they are soft and pliable.
Assemble the Tacos:
Place a portion of the cooked beef onto each tortilla. Top with shredded cabbage or coleslaw mix, chopped cilantro, sliced green onions, and kimchi if using.
