Smoky Texas-Style Ribs with Baked Mac & Cheese


Instructions:
Prepare the Ribs:
Preheat your oven to 300Β°F (150Β°C). Remove the membrane from the back of the ribs and pat them dry. Rub olive oil all over the ribs.
Make the Dry Rub:
In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, cumin, cayenne pepper, salt, and pepper. Rub the spice mixture generously over both sides of the ribs. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator).
Bake the Ribs:
Place the ribs on a baking sheet lined with foil. Cover them tightly with more foil and bake for 2.5 to 3 hours, until tender. Remove the foil, brush the ribs with BBQ sauce, and return to the oven for another 15-20 minutes to caramelize the sauce.
Cook the Mac & Cheese:
Meanwhile, cook the macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce:
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden. Gradually whisk in milk and cook until thickened. Stir in cheddar and mozzarella cheese until melted. Add garlic powder, mustard powder, salt, and pepper.
