Savory Potato and Vegetable Bake

Instructions:

Preheat the Oven:
Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper.
Prepare the Vegetables:
In a large bowl, combine the grated potatoes, finely chopped onion, grated carrot, and finely chopped pepper. Mix well.
Sauté the Vegetables:
Heat a little olive oil in a large skillet over medium heat. Add the vegetable mixture to the skillet and sauté until the vegetables are softened, about 5-7 minutes. Season with salt to taste. Set aside to cool slightly.

Prepare the Batter:

In a separate bowl, whisk together the eggs and milk. Add the wholemeal flour and baking powder, and mix until well combined. The batter should be smooth.

Combine and Assemble:

Add the sautéed vegetables to the batter and mix until everything is well combined. Stir in the chopped chives and half of the grated cheese.
Bake:
Pour the mixture into the prepared baking dish. Sprinkle the remaining grated cheese evenly over the top.
Bake the Dish:
Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the center is set. You can check by inserting a toothpick into the center; it should come out clean.
Cool and Serve:
Remove the dish from the oven and let it cool slightly before serving. Cut into squares or slices and enjoy!

Variations: You can add other vegetables like zucchini, mushrooms, or spinach based on your preference.
Cheese: Feel free to use your favorite type of cheese, such as cheddar, mozzarella, or a combination.
