2 tablespoons olive oil
1 lb ground beef
1 white onion, halved and sliced
4-6 medium Yukon Gold Potatoes
3 cups beef broth, divided
2 tablespoons ketchup
4 teaspoons Worcestershire sauce, divided
1 teaspoon garlic powder, divided
1/4 teaspoon dried thyme
3 tablespoons cornstarch.
Kosher salt and freshly ground black pepper, to taste.
Instructions
Step 1: Prepare the Beef Patties
In a medium bowl, combine ground beef, 2 teaspoons Worcestershire sauce, 1/2 teaspoon garlic powder, salt, and pepper. Mix until well combined.
Shape the mixture into four equal-sized patties, about 1/2-inch thick.
Step 2: Brown the Patties
Heat olive oil in a large skillet over medium-high heat.
Add the patties to the skillet and brown on each side. Once browned, remove the patties from the skillet and set aside on a plate.
Step 3: Prepare the Potatoes
Pierce each potato with a fork a few times, then microwave for 5 minutes to reduce cooking time in the skillet.
Once the potatoes are cool enough to handle, chop them into 1 1/2-inch pieces.
Step 4: Cook the Onions
Add the sliced onions to the same skillet used for the beef, season with salt and pepper, and cook until soft, about 5 minutes.
Step 5: Cook the Potatoes
Add the chopped potatoes and 2 cups of beef broth to the skillet. Bring to a simmer and cook until the potatoes are tender, about 5 minutes.
Step 6: Prepare the Gravy
In a bowl, combine the remaining 1 cup of beef broth, ketchup, 2 teaspoons Worcestershire sauce, 1/2 teaspoon garlic powder, thyme, and cornstarch. Stir until well mixed.
Pour the mixture into the skillet and cook, stirring frequently, until the gravy thickens.
Step 7: Finish the Dish
Reduce the heat to low, return the beef patties to the skillet, and let cook until the patties are hot and cooked through.
Season the gravy to taste with salt and pepper.
Step 8: Serve and Enjoy
Serve the Salisbury Steak and Potatoes hot, with the rich gravy poured over the top.
