Prawn Tikka Masala
1 tablespoon grated fresh ginger
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon paprika
1 teaspoon turmeric
1 teaspoon garam masala
1 can (400ml) diced tomatoes
1 cup (240ml) coconut milk
2 tablespoons plain yogurt
1 tablespoon lemon juice
Fresh coriander, chopped, for garnish
Salt and pepper to taste
Directions:
Marinate the prawns in 1 tablespoon of vegetable oil, half of the cumin, coriander, paprika, turmeric, garam masala, and a pinch of salt. Let marinate for at least 30 minutes.
Heat the remaining oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic and ginger, and cook for 1 minute until fragrant.
Stir in the remaining spices and cook for another minute.
Add the diced tomatoes and simmer for 5 minutes.
