Mushroom Swiss Meatloaf


1 tsp salt
1/2 tsp black pepper
For the Mushroom Gravy:
1 cup mushrooms, sliced
1 tbsp butter
1 tbsp flour
1 1/2 cups beef broth
1/4 cup Swiss cheese, shredded
Salt and pepper to taste
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, finely chopped mushrooms, onion, shredded Swiss cheese, breadcrumbs, milk, egg, garlic, Worcestershire sauce, salt, and black pepper. Mix everything together until well combined, but don’t overmix.
Shape and Bake the Meatloaf:
Shape the mixture into a loaf and place it into the prepared loaf pan. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (71°C).
Make the Mushroom Gravy:
While the meatloaf is baking, melt butter in a skillet over medium heat. Add the sliced mushrooms and sauté until softened, about 5 minutes. Sprinkle in flour and cook for another minute. Slowly whisk in the beef broth and cook until the gravy thickens. Stir in the shredded Swiss cheese until melted and smooth. Season with salt and pepper to taste.
