Mexican Chicken with Cheese Sauce


Chicken: Season both sides of chicken breasts with a mix of chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and pepper. Grill over medium heat until cooked (internal temp of 165°F).
Cheese Sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook until bubbly. Gradually add milk, whisking until smooth. Heat until slightly thickened, then add cheese gradually until melted. Stir in paprika and cayenne pepper.
Serve chicken topped with cheese sauce.
