Mexican Beef Enchiladas with Extra Cheese! 


2 cloves garlic (minced)
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper, to taste
1/2 cup sour cream (for serving)
Chopped fresh cilantro (for garnish)
Directions:
Prepare the Filling:
In a skillet over medium heat, sauté the chopped onion until translucent. Add minced garlic and cook for an additional minute.
Stir in the cooked ground beef, cumin, chili powder, salt, and pepper. Cook until heated through, then set aside.
Warm the Tortillas:
In a separate skillet, lightly warm the corn tortillas to make them pliable. You can do this by heating them for about 30 seconds on each side.
Assemble the Enchiladas:
Preheat your oven to 350°F (175°C).
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Take a warmed tortilla, spoon some beef filling into the center, sprinkle with a little cheese, then roll it up tightly and place seam-side down in the baking dish. Repeat with the remaining tortillas.
