Marry Me Chicken

 

6 chicken thighs.
Seasonings to taste: Onion powder, Garlic powder, Cajun seasoning, Black pepper, Paprika, Italian herbs.
Olive oil.
2 tablespoons butter.
2 tablespoons fresh minced garlic.
1/2 cup chicken broth.
1/3 cup heavy whipping cream.
Sun-dried tomatoes.
1 tablespoon white cooking wine.
1/2 cup fresh shredded Parmesan or Italian cheese.
Salt and pepper to taste.
Additional Italian herbs for sauce.
Instructions

Season the chicken thighs with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs.

Heat olive oil in a skillet over medium-high heat. Pan-sear the chicken thighs on both sides until browned. Transfer the chicken to a separate baking dish.

In the same skillet, melt the butter and sauté the minced garlic for about 3 minutes.

Pour in the chicken broth, sun-dried tomatoes, and heavy whipping cream. Stir to combine and let it simmer.

Add salt, pepper, and Italian herbs to the sauce. Gradually add the shredded cheese while stirring continuously until melted and smooth.

Pour the sauce over the seared chicken thighs in the baking dish.

Bake in a preheated oven at 400°F (200°C) for 30-35 minutes, or until the chicken is fully cooked and tender.

Serve the Marry Me Chicken over mashed potatoes, and enjoy!.

Notes
For a milder dish, reduce or omit the Cajun seasoning.
Swap heavy cream with half-and-half or milk for a lighter version; the sauce will be thinner.
Pairs well with pasta, rice, or crusty bread.
