Luscious Raspberry Cheesecake Cupcakes 

2 large eggs
1 tsp vanilla extract
1 cup fresh raspberries (plus more for topping)
Instructions:
Preheat Oven:
Preheat the oven to 325°F (163°C). Line a muffin tin with cupcake liners.
Make the Crust:
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of each liner.
Prepare the Filling:
In a large bowl, beat the softened cream cheese until smooth. Add sugar and mix well. Beat in the eggs one at a time, followed by vanilla extract. Gently fold in the raspberries.
Fill the Cups:
Spoon the cheesecake filling over the crust in each cupcake liner.
