Lemon Roasted Chicken

 

1. Make a few deep slits on the fleshy parts of the chicken drumsticks. Make a few slits on the baby potatoes as well. Place them in an oven-safe container.

2. Combine all the ingredients numbered 4. Taste-check for salt. Pour over the chicken drumsticks and potatoes. Mix well. Place in the refrigerator overnight or for at least 1 hour. Before baking, sprinkle the onion slices and mix well with the marinade. Top with a few lemon slices.

3. Preheat oven at 425 F. Bake for 30 minutes. Take it out and spoon the pan juices over the chicken and potatoes. Put it back in the oven and bake for another 15 minutes until the chicken drumsticks and baby potatoes are done. Garnish with finely chopped parsley / thyme. Spoon the pan juices over the chicken and potatoes and serve after 2 – 3 minutes. Enjoy!
