Lemon Garlic Herb Shrimp in Foil Packets

Directions:
Preheat Grill or Oven:
Preheat your grill to medium-high heat or your oven to 400°F (200°C).
Prepare the Shrimp:
In a large bowl, combine the shrimp, olive oil, minced garlic, lemon zest, lemon juice, fresh parsley, thyme, oregano, salt, pepper, and red pepper flakes (if using). Toss to coat the shrimp evenly in the marinade.
Assemble the Foil Packets:
Cut four large pieces of heavy-duty aluminum foil (about 12×18 inches). Divide the shrimp mixture evenly among the four pieces of foil, placing it in the center of each piece.
Dot the shrimp with small pieces of butter. Fold the sides of the foil over the shrimp, sealing the packets tightly so that steam cannot escape.
Cook the Foil Packets:
If grilling, place the foil packets on the preheated grill and cook for 8-10 minutes, or until the shrimp are pink and cooked through.
If baking, place the foil packets on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the shrimp are cooked through.
