Key Lime Pie Bars
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or foil, leaving an overhang on the sides. Lightly spray with cooking spray and set aside.
2. Make the Crust:
In a medium bowl, mix the graham cracker crumbs, ¼ cup sugar, and 6 tablespoons melted butter until well combined.
Press the mixture evenly into the bottom of the prepared pan.
Bake for 10 minutes.
After baking, reduce the oven temperature to 300°F (150°C) and set the crust aside to cool.
3. Make the Filling:
In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Scrape the bottom and sides of the bowl.
Blend in the 6 egg yolks until well combined.
With the mixer on low, gradually add the sweetened condensed milk, key lime juice, and lime zest. Blend until fully incorporated.
Pour the filling over the cooled crust and spread it into an even layer.
Bake for 35-40 minutes or until the filling is slightly jiggly but set.
4. Cool and Chill:
Let the bars cool at room temperature for 30 minutes.
Then refrigerate for at least 2-3 hours to fully set.
