1. Preheat the Oven: Preheat your oven to 350F (175C). Lightly grease a loaf pan or line it with parchment paper.
2. SautΓ© the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper, onion, and mushrooms. Cook until the vegetables are soft and the onions are translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.
3. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, cooled sautΓ©ed vegetables, shredded provolone and mozzarella cheese, breadcrumbs, eggs, milk, Worcestershire sauce, ketchup, salt, pepper, oregano, and thyme. Mix until well combined.
4. Form the Meatloaf: Transfer the meatloaf mixture into the prepared loaf pan, pressing it down gently to form an even layer.
5. Bake the Meatloaf: Bake in the preheated oven for 45 minutes.
6. Add the Topping: Remove the meatloaf from the oven and sprinkle the remaining shredded provolone and mozzarella cheese on top. Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meatloaf reaches 160F (71C).
