It’s cheesy


1. Preheat the Oven: Preheat your oven to 350F (175C). Lightly grease a loaf pan or line it with parchment paper.
2. Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper, onion, and mushrooms. Cook until the vegetables are soft and the onions are translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.
3. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, cooled sautéed vegetables, shredded provolone and mozzarella cheese, breadcrumbs, eggs, milk, Worcestershire sauce, ketchup, salt, pepper, oregano, and thyme. Mix until well combined.
4. Form the Meatloaf: Transfer the meatloaf mixture into the prepared loaf pan, pressing it down gently to form an even layer.
5. Bake the Meatloaf: Bake in the preheated oven for 45 minutes.
6. Add the Topping: Remove the meatloaf from the oven and sprinkle the remaining shredded provolone and mozzarella cheese on top. Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meatloaf reaches 160F (71C).
