Ingredients:
4 boneless, skinless chicken breasts
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
2 cloves of garlic, chopped
1 teaspoon paprika
1 teaspoon dried oregano
Salt and black pepper, to taste
1 cup shredded cheddar cheese
1/2 cup grated parmesan cheese
3 tablespoons olive oil
Fresh parsley, chopped, for garnish
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Chicken and Peppers: In a large mixing bowl, combine the chicken breasts, garlic, paprika, dried oregano, salt, pepper, and olive oil. Ensure the chicken is evenly coated with the seasonings. Add the sliced bell peppers and toss together until everything is well combined.
Assemble the Casserole: Transfer the chicken and pepper mixture into a 9×13-inch (23×33 cm) casserole dish, spreading it out evenly.
Add Cheese: Sprinkle the shredded cheddar cheese and grated parmesan cheese evenly over the top of the chicken and peppers.
Bake: Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Garnish and Serve: Remove from the oven and garnish with chopped parsley for a fresh finish. Serve hot and enjoy!
