Homemade Mexican Queso Fundido 


Fresh cilantro for garnish
Warm tortillas or tortilla chips for serving
Directions:
Cook the chorizo:
In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Break it up as it cooks. If there’s too much grease, you can drain some of it, but leave a bit for flavor.
Sauté the veggies:
In the same skillet, add the diced onion, bell pepper, and jalapeño (if using). Cook for 3-4 minutes until softened and fragrant. If the chorizo didn’t release much oil, you can add a little vegetable oil to sauté the vegetables.
Preheat the oven:
Preheat your oven to 400°F (200°C).
Assemble the Queso Fundido:
Transfer the cooked chorizo and sautéed vegetables to an oven-safe dish or skillet. Evenly layer the shredded Oaxaca cheese (or your cheese of choice) on top.
