Try this sandwich open-faced for rich and delicious yet refreshing snack. Any heirloom tomatoes will work, but we like brandywine, Cherokee purple, yellow brandywine, or a combination.
If enjoying open-faced, simply toasting the bread in a toaster or toaster oven before smearing with mayo will work well.
Use whatever mayo you like, but a full-fat mayonnaise works best here. We prefer Duke’s.
