Most Southern fried chicken recipes start with a bath in a seasoned marinade of some sort, whether it’s buttermilk, milk and eggs, or even pickle juice. Adding plenty of salt to this mixture can help your chicken stay moist. This works in the exact same manner as a brine.
Ingredients:
Heavenly Chicken
Chicken (I use boneless skinless thighs, but breasts would work)
Dredge in sour cream seasoned with garlic powder, salt and pepper. Roll around in crushed Ritz crackers. Put on baking sheet. Drizzle with melted butter. Bake 425 for 45 min.

Tips:
1. When cutting the chicken into pieces, make sure all pieces are of equal thickness. You can use a meat mallet and plastic wrap to make your chicken evenly thick. This will help them cook evenly.
2. If you are using a marinade, blot the chicken before you cook it. Otherwise, the marinade will only make the chicken soggy.
3. For best results, cook chicken on a preheated grill or pan.
