- 1 lb ground beefΒ (you can also use ground pork or turkey)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2-3 green chilesΒ (such as Hatch or poblano), roasted, peeled, and chopped
- 2 medium tomatoes, diced
- 1 large potato, peeled and diced
- 1/2 cup peasΒ (optional)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 1/4 cup beef brothΒ or water
- 2 tbsp olive oil.
