GARLIC BUTTER STEAK BITES AND MASH
1 tsp dried thyme or rosemary (optional)
For the mashed potatoes:
4 large potatoes, peeled and cubed
1/4 cup unsalted butter
1/2 cup milk or heavy cream
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
For the Mashed Potatoes:
Boil the potatoes:
Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender (about 15-20 minutes). Drain well.
Mash the potatoes:
In the same pot, add butter and milk (or cream) to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
For the Steak Bites:
Prepare the steak:
Season the steak bites generously with salt and pepper.
Cook the steak bites:
In a large skillet, heat olive oil over medium-high heat. Add the steak bites in a single layer and cook for about 2-3 minutes, until browned on the outside but still medium-rare in the center. You may need to cook in batches to avoid overcrowding the pan.
Add garlic and butter:
Reduce the heat to medium and add the butter and minced garlic to the skillet. Stir to coat the steak bites in the garlic butter. Cook for another 1-2 minutes until the garlic is fragrant and the steak is cooked to your desired doneness. If using, add dried thyme or rosemary during this step.
