Cream Cheese Frosting:
– 8 oz cream cheese, softened
– 1/4 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract
Directions:
1. Preheat your oven to 350Β°F (175Β°C) and grease a 9×13 inch baking pan.
2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. Fold in the grated carrots, crushed pineapple, and walnuts (if using).
7. Pour the batter into the prepared baking pan and spread evenly.
8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
