Prepare the Chicken:
Slice the chicken breasts in half horizontally to create 4 thinner cutlets.
Bread the Chicken:
Set up a breading station with 3 shallow dishes: one with flour, one with beaten egg, and one with a mixture of breadcrumbs, Parmesan cheese, Italian seasoning, and garlic powder. Coat each chicken cutlet first in flour, then in egg, and finally in the breadcrumb mixture.
Cook the Chicken:
Heat a large skillet over medium heat with a few tablespoons of olive oil. Fry the chicken cutlets for about 3-4 minutes per side, until golden and crispy. Remove and drain on paper towels.
Prepare the Garlic Bread:
Slice the baguette lengthwise but do not cut all the way through (like a sandwich). In a small bowl, combine melted butter, minced garlic, and fresh parsley. Brush the mixture generously inside and on top of the bread. Sprinkle the inside with Parmesan cheese.
Assemble the Stuffed Bread:
Spread a thin layer of marinara sauce inside the garlic bread. Place the crispy chicken cutlets inside, spoon more marinara sauce on top of each, and then sprinkle generously with shredded mozzarella cheese.
