Crispy Air Fryer Eggplant Parmesan (No Breadcrumbs)


In one bowl, beat the eggs. In another bowl, mix the almond flour, garlic powder, Italian seasoning, and half of the Parmesan cheese.
Bread the Eggplant:
Dip each eggplant slice into the beaten eggs, then coat with the almond flour mixture, pressing gently to adhere. Repeat until all slices are coated.
Air Fry the Eggplant:
Arrange the coated eggplant slices in a single layer in the air fryer basket (you may need to work in batches). Spray lightly with cooking oil. Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
Assemble the Eggplant Parmesan:
In a baking dish, spread a layer of marinara sauce. Layer half of the crispy eggplant on top, then sprinkle with mozzarella cheese and some Parmesan cheese. Add another layer of marinara sauce, followed by the remaining eggplant and top with the remaining mozzarella and Parmesan.
