Creamy Pesto Chicken Lasagna Roll-Ups


Instructions:
Cook the Lasagna Noodles:
Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel.
Prepare the Filling:
In a bowl, mix the shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, pesto, Parmesan cheese, salt, and pepper until well combined.
Make the Creamy Sauce:
In a saucepan over medium heat, combine heavy cream, chicken broth, Parmesan cheese, garlic powder, salt, and pepper. Cook until heated through, stirring occasionally, about 5 minutes.
Assemble the Roll-Ups:
Preheat your oven to 375Β°F (190Β°C). Spread a thin layer of the creamy sauce in the bottom of a baking dish. Take a lasagna noodle and spread a portion of the chicken mixture along the length. Roll it up tightly and place it seam-side down in the dish. Repeat with remaining noodles and filling.
