Instructions:
Cook the Pasta:
In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
Prepare the Chicken:
Season the sliced chicken breasts with Cajun seasoning, salt, and pepper.
SautΓ© the Chicken:
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, until fully cooked and no longer pink. Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, add the minced garlic and sautΓ© for about 30 seconds until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Add the cherry tomatoes and spinach, cooking until the spinach is wilted. Stir in the cooked chicken and Parmesan cheese. Let the sauce simmer for a few minutes to thicken.
