Cream Cheese Stuffed French Toast 


1 teaspoon vanilla extract
1 ½ teaspoons ground cinnamon
¼ teaspoon salt
Cooking spray or butter (for greasing the skillet)
For the Cream Cheese Filling:
3 tablespoons unsalted butter, softened
8 oz block cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
Optional Toppings:
Fresh strawberries
Extra maple syrup
Powdered sugar for dusting

Step 1: Prepare the Cream Cheese Filling
1️⃣ In a medium bowl, use an electric mixer (or handheld mixer) to beat together the softened cream cheese and butter until smooth. If you don’t have a mixer, you can use a wooden spoon, but ensure both ingredients are well softened to make mixing easier.
2️⃣ Add the powdered sugar and vanilla extract to the mixture and continue to beat until the filling reaches a creamy and spreadable consistency.
Step 2: Assemble the Sandwiches
3️⃣ Spread a generous layer of the cream cheese filling on one slice of brioche bread, then top with another slice to form a sandwich. Repeat this for all the slices of bread.
Step 3: Make the Egg Mixture
4️⃣ In a shallow bowl, whisk together the eggs, almond milk, maple syrup, vanilla extract, ground cinnamon, and salt until well combined.
