CRACK CHICKEN SOUP

My Minnesota Chicken Wild Rice Soup is a delicious chicken soup with wild Minnesota rice, vegetables and cream and is equally great for cold northern winters or any day of the year!

*ingredients :

°1 C raw wild-rice (wash well in hot water using fine strainer)
°9 cups chicken broth (divided – 6 cups for soup, 3 cups for cooking wild rice)
°½ cup butter (salted)
°½ cup yellow onion (peeled and finely chopped)
°3 carrots (washed and diced)
°4 ribs celery (washed and diced – use green celery leaves if you have a few)
°2 bay leaves
°½ teaspoon dried thyme
°1 tablespoon fresh parsley (chopped – use 12 tablespoons chopped parsley for garnish, if desired)
°½ teaspoon garlic powder
°1 cube chicken stock (use Knorr brand cubes)
°pepper salt (to taste, start with about ½ teaspoon each)
°a glass dried white wine
°2 cups cooked chicken (minced or boneless chicken, skinless)
°Half a cup of heavy cream
