Ingredients:
1 lb (450g) white fish fillets (like cod, snapper, or halibut), cut into 1-inch pieces
1 tablespoon vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1-inch piece of ginger, minced
1-2 red chilies, sliced (optional, for heat)
1 can (14 oz) coconut milk
4 cups fish stock (or chicken broth)
1 tablespoon fish sauce
