Instructions:

Prepare the Pie Crust:
In a large mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the mixture forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.
Roll out the dough on a floured surface to fit a 9-inch pie dish. Place the crust in the dish, pressing evenly into the bottom and sides.
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Filling:
Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft and translucent. Add spinach and cook until wilted. Remove from heat and let cool slightly.
