Classic Philly Cheesesteak Sandwich with Fries

1 tbsp butter
4 hoagie rolls or sub rolls
Salt and pepper to taste
For the Fries:
4 large russet potatoes, cut into thin fries
Vegetable oil (for frying)
Salt to taste
Instructions:
Prepare the Fries:
Soak the Potatoes: Soak the cut potatoes in cold water for at least 30 minutes (this helps remove excess starch and makes the fries crispier).
Fry the Potatoes: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat the potatoes dry, then fry them in batches until golden and crispy, about 4-5 minutes per batch. Drain on paper towels and season with salt.
Cook the Steak and Vegetables:
Sauté the Onions and Peppers: In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the sliced onions and bell peppers (if using) and sauté until they are soft and caramelized, about 8-10 minutes. Remove from the skillet and set aside.
Cook the Steak: In the same skillet, add another tbsp of olive oil and the butter. Increase the heat to high and add the thinly sliced steak. Cook quickly, stirring frequently, until the meat is browned and cooked through, about 2-3 minutes. Season with salt and pepper.
Assemble the Sandwiches:
