Cheesy Ground Beef and Rice Casserole 


1 cup shredded cheddar cheese (plus more for topping)
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 cup frozen mixed vegetables (peas, carrots, corn)
Optional: Chopped parsley for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Ground Beef:
In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the meat is no longer pink. Drain any excess fat.
Combine Ingredients:
In a large mixing bowl, combine the cooked beef mixture, uncooked rice, diced tomatoes (with their juices), beef broth, Italian seasoning, salt, black pepper, and frozen mixed vegetables. Mix until everything is well combined.
Transfer to Baking Dish:
Pour the mixture into a greased 9×13-inch baking dish. Spread it evenly in the dish.
Bake:
Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and stir the mixture.
Add Cheese:
Sprinkle the shredded cheddar cheese on top of the casserole. Return it to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.
