2 large eggs, beaten
1 tsp garlic powder
1 tsp Italian seasoning
Salt & pepper, to taste
Fresh basil or parsley, chopped (for garnish)
Olive oil spray (for baking)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with olive oil.
Prepare the Breading:
Set up three bowls: one with flour, one with beaten eggs, and one with Italian-seasoned breadcrumbs mixed with garlic powder, Italian seasoning, and a pinch of salt and pepper.
Bread the Chicken:
Pound the chicken breasts to an even thickness (about ½ inch). Coat each chicken breast first in flour, then dip into the beaten eggs, and finally coat in the breadcrumb mixture. Press the breadcrumbs gently to help them stick.
Bake the Chicken:
Place the breaded chicken breasts on the prepared baking sheet. Lightly spray the tops with olive oil. Bake for 15-18 minutes, flipping halfway through, until the chicken is golden and cooked through.
Add Marinara and Cheese:
Remove the chicken from the oven and spoon about 2 tablespoons of marinara sauce over each chicken breast. Sprinkle generously with mozzarella and Parmesan cheese.
