Ingredients:
– 1 pound of fresh scallops, dry patted
– Two tablespoons melted unsalted butter
– Two cloves minced garlic.
_ One tablespoon lemon juice
– A teaspoon of lemon zest
– 1/4 teaspoon of paprika
– To taste salt and black pepper
– Chopped fresh parsley for garnish
– Lemon wedges to serve
Direction:
1. Preheat the broiler in your oven to high heat. Set the oven rack on the top position about 6 inches from the heating element.
2. In a small bowl, mix together melted butter, minced garlic, lemon juice, lemon zest, paprika, salt and black pepper.
3. Put scallops on a baking sheet that is lined with aluminum foil or parchment paper making sure they are in one layer.
4. Coat each one evenly with generous amount of butter mixture by brushing it over them.
5. Broil scallops under preheated broiler for 6 to 8 minutes until they are opaque and beginning to brown on top but not overcooking which will cause them to be tough and rubbery.
6. Remove from oven and transfer onto serving platter.
7. Garnish with chopped fresh parsley immediately serve with lemon wedges alongside it.
