Breakfast Lasagna 

1 tsp salt
1/2 tsp black pepper
4 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
2 cups ricotta cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions:
Prepare the eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper. Heat a large skillet over medium heat and scramble the eggs until just set. Remove from heat and set aside.
Cook the sausage: In the same skillet, cook the breakfast sausage over medium heat until browned and fully cooked through. Drain any excess fat and set aside.
Assemble the lasagna: Preheat the oven to 350°F (175°C). In a greased 9×13-inch baking dish, layer as follows:
First layer: Spread a thin layer of ricotta cheese across the bottom of the dish. Place 3 cooked lasagna noodles on top.
Second layer: Add half of the scrambled eggs, half of the cooked sausage, half of the crumbled bacon, and a third of the shredded cheddar and mozzarella cheese.
Third layer: Add 3 more lasagna noodles, spread a thin layer of ricotta cheese, and then repeat with the remaining scrambled eggs, sausage, bacon, and another third of the shredded cheeses.
Final layer: Top with the last 3 lasagna noodles, spread the remaining ricotta cheese, and sprinkle the remaining cheddar and mozzarella cheese evenly over the top.
