Banana Zucchini Muffins


6. 1 teaspoon vanilla extract
7. 1 1/2 cups all-purpose flour
8. 1 teaspoon baking soda
9. 1/2 teaspoon baking powder
10. 1/2 teaspoon salt
11. 1 teaspoon ground cinnamon
12. 1/2 cup chopped nuts or chocolate chips (optional)
Directions
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a large bowl, mix together the mashed bananas, grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until well combined.
3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If you’re using nuts or chocolate chips, fold them in now.
5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
