Serve the flank steak with blue cheese and tomato marmalade. Itβs delicious over salads, pasta, or other dishes.
For the Tomato Marmalade:
In a saucepan, combine the chopped Roma tomatoes, tomato paste, diced red onion, minced garlic, canola oil, lemon juice, apple cider vinegar, sugar, salt, and optional red pepper flakes.
Simmer over medium heat until the vegetables soften and the sauce thickens, about 10-15 minutes.
