What you need:
1 grated onion, 12 cups of fresh chopped parsley, 2/3 cup of parmesan cheese, 1/3 cup of Italian rusk, 1 egg, 2 teaspoons of marinara sauce plus 1/3 cup, 3 minced garlic cloves, a pinch of crushed red pepper, salt and pepper to taste, 1 pack of ground beef (1.5 to 2 pounds), and 16 cubes of mozzarella cheese (1/2 inch cubes).
INSTRUCTIONS
*Setup: Lower half of the oven’s oven rack should be your starting point. Preheat the oven to 400°F. Toss together the parsley, parmesan, bread crumbs, eggs, marinara, garlic, red pepper flakes, salt, and pepper in a major basin. Add the onion and mix well. Once combined, include the meat and combine using your hands. Form sixteen balls with the meat mixture.
Pierce a meatball with a fork and stuff it with a cube of mozzarella cheese. To make the meatballs so the cheese doesn’t show, fix them. Coat the base of a baking dish with 1/3 cup of marinara. After placing the meatballs inside, add a little extra virgin olive oil and stir to coat. To ensure doneness, bake for 15 minutes.
