2 cups all-purpose flour (about 250 grams)
2 teaspoons kosher salt
3 large egg yolks
1 large egg
60 milliliters (1/4 cup) water.
Instructions
On a clean work surface, mix together the flour and salt with your fingers. Create a well and add the egg yolks and egg.
Using your fingers, work the eggs into the dough.
Gradually add the water, 1 teaspoon at a time, and continue kneading until the dough holds together. Knead the dough for 10-15 minutes.
Roll out the dough to the desired thickness and cut it into your preferred width. Gather any leftover scraps, reroll, and cut until all the dough is used up.
To cook, drop the noodles into boiling water and boil until fully cooked, about 2 to 4 minutes, depending on thickness.
Always test for doneness and adjust cooking time as needed.
