Air fryer accordion potatoes

Ingredients:

4 medium-sized potatoes (Yukon Gold or Russet)
2 tbsp (30ml) olive oil or melted butter
1/2 tsp (2.5g) garlic powder
1/2 tsp (2.5g) paprika
1/2 tsp (2.5g) dried oregano
Salt and pepper to taste
1/4 cup (25g) grated Parmesan cheese (optional)
Fresh parsley for garnish (optional)

Instructions:

Prepare the Potatoes:
Wash and peel the potatoes if desired. Place a potato on a cutting board. Place two wooden spoons or chopsticks parallel to each other on either side of the potato. Slice the potato into thin slices, about 1/8 inch (3mm) thick, without cutting all the way through. The spoons or chopsticks will help prevent cutting through the potato. Repeat with the remaining potatoes.
Season the Potatoes:
In a small bowl, mix the olive oil (or melted butter), garlic powder, paprika, oregano, salt, and pepper. Brush the seasoned oil mixture over the potatoes, making sure to get some of the mixture into the cuts.
Air Fry the Potatoes:
Preheat your air fryer to 375Β°F (190Β°C). Place the potatoes in the air fryer basket, ensuring they are not touching each other. Air fry for 25-30 minutes, or until the potatoes are crispy on the outside and tender on the inside. Check halfway through cooking and brush with any remaining seasoned oil if needed.
Optional Topping:
If desired, sprinkle the potatoes with grated Parmesan cheese during the last 5 minutes of cooking for a crispy, cheesy topping.
Serve:
Once the potatoes are done, remove them from the air fryer. Garnish with fresh parsley and serve immediately. These accordion potatoes pair well with sour cream, ranch dressing, or your favorite dipping sauce.
